Waffles with Homemade Lemon Curd, Raspberries & Maple Syrup

After gorging myself on sweets for the last few months, I'm definitely ready for a little post-holiday detox. I'm not talking about the liquid fast/green smoothie kind, but something a little more wholesome. It's still winter and although I'm still full from December, I'd still like a little comfort in my breakfast.
Here are three wholesome, nourishing and delicious breakfasts that will make you feel like your December diet is worlds away – a super simple and smart way to start your New Year days.
Ingredients
4 Van’s Gluten Free Original Waffles, 2 tablespoons lemon curd (recipe below), ½ cup raspberries, About 1/3 maple syrup, Once homemade lemon curd has chilled, top your waffles with a dollop of lemon curd, raspberries and maple syrup. Serve immediately., Simple Lemon Curd, (recipe from Epicurious), Ingredients:, ½ cup fresh lemon juice, 2 teaspoons finely grated fresh lemon zest, ½ cup sugar, 3 large eggs, 3/4 stick (6 tablespoons) unsalted butter, cut into bits,INSTRUCTIONS
Whisk together juice, zest, sugar, and eggs in a 2-quart heavy saucepan. Stir in butter and cook over moderately low heat, whisking frequently, until curd is thick enough to hold marks of the whisk and first bubble appears on surface, about 6 minutes.
Transfer lemon curd to a bowl and chill, its surface covered with plastic wrap, until cold, at least 1 hour.
Once homemade lemon curd has chilled, top your waffles with a dollop of lemon curd, raspberries and maple syrup. Serve immediately.
