Mornings are hectic. Getting everyone up, ready, and out the door for the school bus and off to work on time isn’t easy. Thankfully I pack lunches the night before, but I still find myself running out the door with little to no breakfast in my stomach. I know many other parents can sympathize – we make sure our kids get a hearty breakfast, but we’re scrambling to get dishes done, bags packed, and are just thankful everyone’s socks match.
That’s why the gluten free snacks that I pack for work are so important. They’re often my only morning fuel to give me the energy I need to make it until lunch time. And thanks to Van’s Natural Foods, they don’t have to be boring!
Waffles aren’t just for breakfast! They’re a great bread substitute. This snack idea is fun for adults and kids – who love eating anything on a stick. Using Van’s Gluten Free Blueberry Waffles cut them into squares and spread on a bit of cream cheese to each side. Then add a banana slice to the center before stacking and sliding a pop stick or food pick to through them, to create a “waffle sandwich on a stick”. Pair with fresh fruit on the side. Tip: If you’re worried about the banana slices browning, dip them in a mixture of lemon juice or pineapple juice and water. The acids will help prevent them from browning and by diluting it with water, it won’t affect the taste.
Ingredients
Gluten Free Waffles Blueberry, banana slice, cream cheese,INSTRUCTIONS
Cut Van's Gluten Free Blueberry Waffles into squares
Spread a bit of cream cheese on each side of the waffle squares
Add a banana slice to the center of squares
Stack and slide a food pick through the waffles to create a "waffle sandwich on a stick"
