Waffle Sloppy Joes

When time is short, this recipe always comes to my dinner rescue. If you’re anything like me—trying to balance work, family time and getting dinner on the table, versatile meals that come together fast and use mostly pantry ingredients will save you time not only at the supermarket, but at the stove.
For this recipe, waffles—with their little nooks that perfectly soak up the sloppy joe sauce—form the base. Then, all you need to shop for is some ground turkey (which I often have in my freezer and just defrost the night before I want to make the recipe) and some fresh ingredients, like bell peppers and onion. Nothing could be more high in flavor and low in labor. And more than anything—something you’re whole family will enjoy.
Ingredients
Serves: 4, 2 tablespoons olive oil, 1 bell pepper, coarsely chopped, ½ onion, coarsely chopped, 1 pound ground turkey, ¾ tomato sauce, 1 tablespoon Worcestershire sauce, Salt and pepper, Gluten Free Waffles Original, toasted, Sour cream, sliced avocado and cilantro, for serving,INSTRUCTIONS
In a large, heavy skillet, heat the olive oil over medium heat.
Add the bell pepper and onion, and cook, stirring occasionally, until softened, about 5 minutes.
Add the turkey and cook over medium-high heat, breaking up the meat, until cooked through, about 6 minutes.
Stir in the tomato sauce and Worcestershire sauce, and season with about 1 teaspoon salt and about ¼ teaspoon pepper; reduce the heat to low and let simmer.
Place 2 toasted waffles on each plate, top with some of the sloppy joe sauce, sour cream, avocado and cilantro.
