Waffle Caprese Sandwiches

As a registered dietitian, healthy food is important to me. When I grocery shop for my family, the first thing I do is flip the package over to check out the ingredients. Nutrients are important, but ingredients are key. That’s why I buy Van’s Ancient Grain waffles. They are packed with whole grains, sweetened with fruit juice, and non-GMO project verified. Plus, my family loves them.
Waffle sandwiches are big around here. We even have a waffle sandwich truck that shows up at our farmer’s market each week. Because April is National Gardening Month, I decided to take a savory spin on the waffle sandwich by including fresh herbs from the garden. With fresh mozzarella cheese, beefy heirloom tomatoes, fresh basil, and a drizzle of sweet balsamic, the combination of flavors is fantastic! Make a sandwich for you, or cut it up into bite-sized appetizers. These would be great for a party and can be served at room temperature. If you want to serve these for a party appetizer, secure sandwich bites with toothpicks.
Ingredients
GF Ancient Grains Waffles, (toasted), Fresh mozzarella cheese (sliced), Heirloom tomatoes (sliced), Fresh basil leaves, Good balsamic vinegar,INSTRUCTIONS
Stack one waffle on the bottom, add tomato slice, cheese, basil and a drizzle of balsamic vinegar. Add another waffle to the top. Slice and serve.
