Open-Faced Burrito Waffle

February is American Heart Month, and it’s a great time to find new ways to love your heart. Van’s Multigrain Waffles have 7g of fiber and are made with a mix of 8 whole grains, making them the perfect base for a hearty breakfast or nutritious snack. Today, I’m sharing some of my favorite waffle topping ideas because you can do so much with a waffle, other than just eating it with syrup!
Open-Faced Burrito Waffle
Swap out your breakfast or lunch burrito with this colorful open-faced burrito waffle. It’s made with black beans, diced tomatoes, avocado chunks, shredded cheddar cheese, and a little salsa to tie it all together.
Ingredients
2 Van’s Multigrain Waffles, 2 tablespoons canned black beans, rinsed and patted dry, 2 tablespoons of your favorite salsa, 1 tablespoon chopped tomatoes (cut into cubes about ¼ inch by ¼ inch), 10 small avocado cubes (about ½ inch by ½ inch), 1 tablespoon shredded low-fat cheddar cheese,INSTRUCTIONS
Toast your waffles to desired crispness.
Top waffles with remaining ingredients in the order they are listed, splitting the ingredients equally between the two waffles.
