Eggs Benedict is traditionally made with poached eggs and sliced ham, covered with decadently rich hollandaise sauce. But trust us, with these creamy avocado slices and the runny yolk of the poached egg, you won’t miss the hollandaise a bit.
Top a toasted waffle with a tomato slice, a quarter-avocado, thinly sliced, and top it off with a poached egg.
