Van's Cocoa Sensation Cereal Bars

My husband is a professional baseball coach. For us, that means a summer filled with road trips. Just this past week, we drove from Arizona to Montana with our two kids. When we are on the road, we try our best to eat well, just like we would at home. This means preparing ahead of time and packing a cooler full of wholesome meals and snacks. It’s so nice to not have to rely on fast food (plus, our own food tastes better anyways).
For this trip, I packed a bag with nuts, snack bars, jerky, and fruit leather. Then I filled the cooler with fruit, veggies, hummus, meat, cheese and pickles. That covered us for lunch, dinner, and snacks, but what about breakfast?
When I saw Van’s new Cocoa Sensation cereal, I had an idea. What about a fun cereal bar? Paired with a hard-boiled egg, this sweet treat was perfect for our early morning drive.
Ingredients½ cup natural peanut butter, ½ cup honey, 3 cups Van’s Chocolate Cereal,
Directions: Line an 8 x 8 inch square pan with parchment paper. In a saucepan over medium heat, combine peanut butter and honey. Stir together until mixture comes to a simmer. Remove from heat, then stir in cereal until evenly coated. Pour mixture into prepared pan, cover with another piece of parchment paper and press firmly until evenly packed down. Freeze, covered, for one hour. Cut into bar shapes, and wrap individually in parchment paper. Tape closed (use fun washi tape if you have it). Store in the refrigerator or cooler.
