Say Cheese! Pesto Bruschetta

Growing up in an Italian household, I had my share of crusty bruschetta and remember my mom picking fresh basil from our garden to make her classic pesto. For a fun, gluten-free spin on both of these Italian classics, I decided to use Van’s Say Cheese! Crackers to replace the parmesan and swapped in flavorful Van’s Fire-Roasted Veggie crackers for the bread. The result? A perfectly creamy, cheesy pesto with the deliciously unexpected crunch from a cracker.
Ingredients½ cup Gluten Free Crackers - Say Cheese!, finely crushed (about 1 cup whole crackers), finely crushed, 2 cups packed basil leaves, 1 clove garlic, ½ cup chopped walnuts, plus more for topping, ¼ cup extra-virgin olive oil, Salt, to taste, Crushed red pepper flakes, to taste, optional, Van’s Fire-Roasted Veggie Crackers, for serving,
Place the Van’s Say Cheese! Crackers in a food processor.
Finely crush the crackers.
Add the basil, garlic and walnuts; pulse until finely chopped.
With the machine on, slowly add the olive oil and 2 tablespoons water until combined. Season with salt and red pepper flakes, to taste.
To serve, smear pesto over the Van’s Fire-Roasted Veggie Crackers and top with walnuts.
